One-Pan Shrimp Rice

This 30 min shrimp rice dish comes together in one pan for minimal cleanup and maximum flavor. A wholesome, quick dinner your family will love!

Ingredients
  

  • 1 lb large shrimp, peeled and deveined
  • 2 cups long-grain white rice
  • 4 cups chicken or seafood broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1 lemon, cut into wedges

Instructions
 

Prepare the ingredients:

  • Peel and devein shrimp
  • Dice onion and mince garlic
  • Measure out all ingredients

Sauté the aromatics:

  • Heat olive oil in a large skillet
  • Sauté onions until translucent
  • Add minced garlic and cook for 30 seconds

Toast the rice:

  • Add rice to the skillet
  • Stir to coat with oil and toast lightly
  • Cook for 2-3 minutes until rice becomes slightly golden

Add liquids and seasonings:

  • Pour in broth
  • Add paprika, salt, and pepper
  • Stir to combine and bring to a simmer

Cook the rice:

  • Cover the skillet
  • Reduce heat to low
  • Simmer for 15-18 minutes until rice is almost tender

Add the shrimp:

  • Arrange shrimp on top of the rice
  • Cover and cook for 3-4 minutes
  • Shrimp should be pink and cooked through

Finish and serve:

  • Remove from heat
  • Let sit covered for 5 minutes
  • Garnish with fresh parsley
  • Serve with lemon wedges
