Ingredients
  

  • 1.5 pounds lean ground beef
  • 1  onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 cup  beef broth
  • 1 can (14.5 oz) diced tomatoes undrained
  • 2 tbsp tomato paste
  • 2 tsp Italian seasoning
  • 2 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp Worcestershire sauce
  • 1 cup  frozen corn kernels
  • 1 cup frozen peas
  • 1/4 cup fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the Ground Beef
    Heat a large skillet over medium-high heat. Add ground beef, breaking into small pieces while cooking until no pink remains (5-7 minutes). Drain excess fat if using higher-fat beef.
  • Add Aromatics
    Add diced onion and minced garlic to the browned beef. Cook 2-3 minutes until onions soften and become translucent.
  • Transfer to Slow Cooker
    Transfer beef mixture to your slow cooker. Scrape all caramelized bits from skillet for maximum flavor.
  • Add Remaining Ingredients
    Add bell pepper, beef broth, diced tomatoes with juice, tomato paste, Italian seasoning, paprika, oregano, salt, pepper, and Worcestershire sauce. Stir well.
  •  Set Cooking Time
    Cover and cook on low for 4-6 hours or high for 2-3 hours. The low setting develops richer flavors if time allows.
  • Add Frozen Vegetables
    During the final 30 minutes, stir in frozen corn and peas. This timing maintains their color, texture, and flavor.
  • Final Seasoning
    Once cooking completes, taste and adjust seasonings as needed. A touch more salt or Worcestershire sauce can enhance flavors.
  • Garnish and Serve
    Sprinkle with fresh parsley before serving to add bright color and flavor contrast.
